It’s hard to believe there are only 2 main ingredients to make these amazing Mango & Raspberry Cider Crepes and be so delicious.
No added sugar as they are made with Rekorderlig Mango-Raspberry Cider that has its own sweet taste. And you don’t have to worry, it has Vegan printed on the label. ????
And you can drink the leftover cider – YAY!
They are thin and light and BE WARNED, extremely moreish!

How To Make Mango & Raspberry Cider Crepes
Equipment you will need
Step 1 – Sieve the flour over a large jug or bowl.
Step 2 – Add the cider and whisk immediately until a thick batter is achieved. This will only take 30-60 seconds but ensure the flour is thoroughly whisked in so there are no lumps.

Step 3 – Brush a small non-stick pan with a very small amount of oil (I use a pan that measures 14cm / 5½ inches at its base and 20cm / 8 inches across the top).
Step 4 – Heat the pan over a medium heat. When the pan is hot, carefully ladle the batter mixture into the hot pan and roll the pan so the batter spreads to cover the bottom. (I use a small ladle to do this but only two thirds full, which is approximately 30ml / 2 tablespoons at a time)

Step 5 – Cook for 30 seconds and then turn and cook the other side for 30 seconds.
If you feel brave you can toss them to cook the other side ????

Step 6 – Place onto a plate and keep warm whilst you cook the rest of the batter by repeating steps 3-5. If you don’t want to serve straight away, you can let them cool and warm them back through when ready to serve. Each crepe will only take 5-10 seconds in a microwave.
Step 7 – Serve with fresh fruit (I used mashed mango and raspberries to complement the mango and raspberry cider) and my vegan sweetened whipped cream – delicious!


Served with fresh mashed mango and raspberries (or the fruit of your choice), my vegan sweetened whipped cream, and a dusting of icing sugar, they make a dessert fit for a king!
