Pasta is such a staple in anyone’s diet and this Vegan Pasta & Bacon in Cashew White Sauce is full of plant-based protein from the vegan bacon and the cashew nuts in the sauce.
The crispy bacon pieces add a lovely smoky flavour to the tasty cashew white sauce and can be made to the consistency of your choice by adding back some of the water that the pasta cooks in.
How To Make Pasta & Bacon in Cashew Sauce
Equipment you will need
Note – this recipe requires 1 quantity of Cashew White Sauce and is not included in the time it takes to make this dish. However, the sauce can be made ahead of time and kept in the fridge until needed.
It takes approximately 1 hour and 15 minutes to make the sauce because of soaking the cashew nuts. But you can pre-soak the cashew nuts and then easily make the sauce just before completing the steps for this recipe.
Step 1 – Bring a large pan of water to a boil and add the salt.
Step 2 – Add the pasta, bring back to a boil, and stir. Reduce the heat just enough to maintain a good simmer. Cook for 10 minutes.
Step 3 – Melt the butter in a large frying pan over a medium-low heat. Add the garlic and diced bacon, and fry for 5 minutes, stirring occasionally to allow them to brown and crisp. Keep over a low heat until the pasta has cooked.
If you can’t get smoked vegan bacon you can add a teaspoon of smoked paprika to the melted butter before adding the garlic and bacon. This will add a little smoked flavour.
Step 4 – Drain the pasta but keep the water.
Step 5 – Add the pasta to the bacon and stir in the quantity of vegan cashew white sauce.
Step 6 – Increase the heat enough to gently heat through the sauce, stirring as necessary to ensure even heating. This will take 2-3 minutes.
Step 7 – Add the saved pasta water, a few tablespoons at a time, and stir in to get the right consistency of the sauce. (The sauce will have thickened if made in advance and left to cool).
How much water you add is really down to a question of how thick/thin you like your sauce. So the more of the saved water you add the thinner the sauce will become.
Step 8 – Transfer to a serving dish and season with freshly ground black pepper to taste.
Step 9 – Serve with a fresh salad, like my Politiki Salad.
