Politiki (Salata) is a Constantinople dish that is simply a Greek version of coleslaw. And, as with any coleslaw, you can put your own twist on it as I have done with this Politiki (Greek Cabbage Salad)!
I chose to add celeriac to my version of this wonderful salad. Celeriac can have quite a strong aniseed flavour, but grated in this salad, it just adds a subtle difference to the flavour of the slightly sweetened, salted and pickled cabbage.
Many Politiki salads will come mixed, as does coleslaw, but I chose to layer mine and, as I do like a little spice, I added the chopped pickled chillies to add another pickled element to the layers.
The reason I chose to layer, rather than mix all together, is because it brings back memories of the first time I had this salad on the Greek island of Aegina. I also think that the layers add some depth and showcases each ingredient in their own right!
It’s simple but so fresh tasting and compliments any other salads, and other foods, you serve with it. Making it great for a buffet, mezze, or tapas meal.
How To Make Politiki (Greek Cabbage Salad)
Equipment you will need
Step 1 – Place the vinegar, sugar and salt in a bowl and stir to dissolve.
Step 2 – Add the cabbage, stir and set aside for 30 minutes, stirring occasionally.
Step 3 – If necessary, use a sieve to strain any excess liquid from the cabbage and place the cabbage on a serving plate.
Step 4 – Next add the grated celeriac, leaving a border to show the cabbage.
Step 5 – Now add the grated carrot, again leaving a border to show some of the celeriac, and top with the chopped pickled chilli peppers and drizzle with olive oil if using.
Step 6 – Serve as part of a Greek mezze with other dishes like my spicy galette and butter bean salad.
I also love it drizzled in oil with a good grinding of black pepper and a chunk of bread – yummy!
Leftovers of this lovely salad will stay fresh for 24 hours when stored in a fridge but is best served within a couple of hours when first made.

Ingredients
- ¼ white cabbage, finely sliced
- 50ml / 1½fl oz white wine vinegar
- 2.5ml / ½ teaspoon sugar
