These Stuffed Spicy Baked Tomatoes are so versatile. You can have them as part of a meal but they also make great party food and can be served at BBQs, as part of a buffet or as part of a tapas meal. In fact, these are a slight variation of the Tomates al Horno (Baked Tomatoes) in my Vegan Tapas ebook which is free to all subscribers.
If serving as party food, they look fantastic served on a spinach leaf and it makes it easier for your party guests to pick them up individually!
Although the ingredients for this recipe have a yield of 8 tomato halves, you can increase the amounts by doubling, tripling, etc. until you have the amount you need. ????
Very easy to make ahead of time, just stop after step 5 and continue with step 6 just before you are ready to serve them.
I am a real fan of black pepper and I think a little sprinkling of freshly ground pepper over the top just finishes them off perfectly.
If you are not a fan of spicy food, replace the vegan jalapeno cheese with a vegan smoked or plain cheese. As long as it melts well (check the packet) it will work just as well.
How To Make Stuffed Spicy Baked Tomatoes
Equipment you will need
Step 1 – Preheat the oven to 180℃ fan/200℃/400°F/Gas 6.
Step 2 – Slice each tomato in half and remove the seeds and discard.
Step 3 – Put all the remaining ingredients in a bowl and mix well.
Step 4 – Spoon the mixture into the tomato halves, pushing it in well with the back of a spoon. Keep adding the mixture, piling it up, until you have used it all. The mixture will sink as the cheese melts in the oven.
Step 5 – Place the tomatoes on a lined oven tray. Place them so they are touching each other to give support.
Step 5 – Bake in the middle of the oven for 12-15 minutes, until the tomatoes have softened and the cheese has melted. Do not let the tomatoes cook to the point they start to collapse or they will be too soft to support the filling.
If you want to make these delicious little baked tomatoes ahead of time, this is a good place to stop and then carry on with step 6 a few minutes before you want to serve them.
Step 6 – Preheat the grill and place the baked tomatoes under for 1-2 minutes to brown the top.
If you have premade the tomatoes and grilling from cold, they may take a little longer and will benefit from a medium grill, rather than a hot grill, so that the tomatoes heat through gently before browning the top.
Step 7 – Transfer to a serving plate, sprinkle with freshly ground black pepper (optional), and serve warm as part of a meal or as part of a BBQ, buffet, or tapas.
They ooze delicious tasty melted cheese when cut or bitten into – yummy!
