This Vegan Sweetened Whipped Cream is light and delicious and made from fabulous aquafaba, the liquid drained from tinned chickpeas.
Aquafaba is a truly wonder liquid and can be used as an egg-replacer in so many recipes.
It only takes a few minutes and 3 other ingredients to whip up the aquafaba into a delicious, sweetened whipped cream that is great with fruit, crepes, and your favourite desserts.
And it holds its form beautifully.
This recipe is probably a little unconventional compared to other recipes as I whisk the aquafaba with all the other ingredients at the same time. Whereas most recipes would start with the aquafaba and then add the other ingredients. But, patience is not my forte so I tried it like this and it works great every time!
How To Make Vegan Sweetened Whipped Cream
This recipe makes 600ml / 20floz but can be halved if you don’t need that much.
Equipment you will need
Step 1 – Place all the ingredients into a tall container or large bowl and mix together.
Step 2 – Whisk using an electric hand-held whisk or a food processor that has a whisk attachment. Start slowly and increase the speed once the ingredients are blended together. It is important to have a high-powered whisk – mine is 800 watts and does the job well.
Step 3 – It will take approximately 4-6 minutes, depending on the power of your whisk. Stop every few seconds to see how the cream is forming. When it holds its shape and stays on the side of the container, it is done. If the creamed has not whipped sufficiently after 6 minutes just persevere and keep whisking for a few minutes more.
Step 4 – Transfer to a bowl and serve with fruit, crepes, and puddings of your choice.
Because it’s so quick to make, it’s best made and served straight away. However, it will keep in the fridge for a couple of hours before it starts to separate again.
When it separates, liquid forms on the bottom but the cream still holds its shape at the top so my husband just eats that rather than waste any leftovers!
Note – this is a dessert cream and not suitable for hot drinks. However, it is great on iced coffee and other cold drinks where you might want to add a little whipped cream.
